LENTILS Buy good quality – small black and small green – relatively expensive, but actually very cheap as a $3 container of dry lentils will make a large amount of cooked lentils. In saucepan, cover 1 cup of Lentils with 1” water. Bring to a boil and simmer for 30 minutes. While simmering, add 1-2 teaspoons of grated fresh ginger and a couple finely diced Plum Tomatoes In a pan sprayed with olive oil or canola oil, on low heat, sauté 1 finely chopped medium Onion and a ¼ teaspoon of CUMIN SEEDS. When lentils have absorbed most of the water and are getting soft, add the onions/cumin to the saucepan and also add ¼ teaspoon of ground mustard seed and ¼ teaspoon of curry powder Stir and serve. If you have excess liquid, you may drain it off. Optional: add some brown rice - would cook separately in water and add at the end of the preparation. It will absorb any excess liquid also. |
