Bountiful Bulghar

1 med Onion/scallion

2 cloves Garlic

1 Pepper (green/yellow/red)

6 Mushrooms

3 Carrots

2 stalks Celery

2 med Chicken Breast (cubed)

1 tspn Curry Powder

3 cups Chicken Stock

1.5 cups Bulghar

Wipe frying pan with olive oil (or spray)

Dice & saute all vegetables

Add cubed chicken and saute

Add boiling chicken broth (heated separately)

Add curry powder

Add bulghar

Stir, remove from heat, and cover

Ready in 20 minutes

May be served alone or mixed with pasta; small whole wheat bows work very well.
