Heart Healthy PIZZA

DOUGH:

1 cup Semolina flour

1 cup White Whole Wheat flour

1 cup Unbleached All Purpose flour

2 Tblspns Dough Relaxer (Lora Brody) if available

1 Tspn instant yeast

1 Tblspn Olive oil

1 – 1.5 cups water to make soft, smooth dough

Mix dough ingredients by hand, mixer or bread machine until smooth and soft, but looking rough on the surface

Let is rise 45 minutes at which point you can refrigerate it for several hours or work with it right away.

Divide in two and shape round or rectangular as thick or thin as you like it.  I usually put each on a sheet of parchment paper which makes it very easy to handle.

Pre-Bake for 4 minutes in a 500o  oven

Then TOP it with choices such as below and bake ~ 8 minutes until crust nicely browned and surface bubbly.

TOPPINGS:

1. Covering of low fat tomato sauce

2. Sautéed onions, peppers, cauliflower, mushrooms, asparagus, broccoli or any veggies of your choosing

3. Sautéed, thinly sliced low fat turkey sausage (keep in freezer, partially defrost on counter or 10 seconds in microwave so you can slice)

4. Finish with low fat mozzarella  (Package contains 2 cups which is more than enough for 2 large pizzas which should serve 8 people or 6 grams of fat/serving.

Enjoy with a tossed salad.  You might try an interesting vinegar for a dressing such as balsamic, zinfandel, or fig (my favorite).

You may refrigerate pre-baked crusts several days or freeze for up to 4 weeks.
